Not really, according to a recent Gallup poll. Only one in five Americans actively attempt to include gluten-free foods in their diet. The vast majority of the public either doesn't pay the subject of gluten much mind or tries to avoid gluten-free substances all together. Even still, the number of Americans that include gluten-free foods in their diet is far higher than the estimated 1 in 100 people that are negatively affected by gluten.
